Kalanamak is a naturally aromatic heritage rice associated with eastern Uttar Pradesh. It is also called Kala Namak rice, Black Salt Rice or Buddha Rice, although it is not the same product as black-coloured rice.
A well-selected Kalanamak grain is valued for its fragrance and distinctive cooked character. SONDH will publish water ratios, resting time and batch-specific cooking guidance when the final launch lot is confirmed.
